For our Asia region filter offering, we have selected a Caturra variety from Srima Organic Farm, located in the highlands of Chiang Rai, Thailand. This lot underwent a co-fermentation process, a process where the coffee cherries are fermented alongside a natural yeast culture derived from orange blossoms. The result is a sweet cup with a pronounced white floral aromatics, tea-like body, and a soft, lingering finish. By featuring this coffee, we hope to highlight an alternative to conventional coffee fermentation techniques, the potential of co-fermentation to present both clarity and also complexity in the cup, and to celebrate innovation done with intention.
