Edilberto Torres Sánchez is a second-generation coffee producer from San Antonio in Huabal. He grows Catuai and Bourbon at around 1,600 m.a.s.l. and has focused on natural processing in recent years. Ripe cherries are carefully hand-picked and dried on raised beds for 25–30 days, with regular turning and protection from rain and night moisture.
Huabal is known for producing expressive, high-quality coffees due to its varied microclimates and soils. In the cup, this coffee shows caramel-like sweetness with a rich, jammy mouthfeel. Ripe fruit notes reminiscent of figs add warmth and depth, resulting in a rounded and very approachable cup.
