Ethiopia - Koke Nitrogen Jasper 0925

We picked this coffee out of curiosity. Nitrogen natural was unfamiliar to us, and that was reason enough to explore it.

Most anaerobic coffees tend to lean louder—winey, heavy, sometimes pushed too far. This one moved differently. Instead of changing the coffee too much, it seemed to preserve what was already there.

From hot to cold, it stayed clear and recognizably Ethiopian. That caught our attention. Roasting it took a few tries before it made sense. We got there in the end.

Floral, purple fruit, clean finish.
