This one stood out immediately on the table. The first cup was full of character—fruity, floral, and lively. It felt expressive without being overwhelming, which made it easy to come back to.
Looking deeper into the process, the controlled fermentation explains that clarity and structure. Still, what mattered most was how it showed in the cup. We kept the roast light to preserve that balance and let it carry through.
Fruity, floral, with a syrupy finish.

It’s been awhile since we last featured a Costa Rican coffee, and this one brought us back immediately.
The H1 varietal; a cross between Sudan Rume and Sarchimor. They already carries a lot of character on its own. We approached the roast with a longer Maillard phase to push sweetness without losing its structure.
What came through felt rich, layered, and nostalgic. Like natural Costa Ricans from years ago.
Purple and orange tones showed up clearly in the cup.
Shiiraz. Orange candy. Raisins.
